i was craving a BLT today & came up with this tasty combo...
super awesome BLT:
2 slices of artisan bread (i used pi zano bread from new pioneer co-op)
3 slices extra thick applewood smoked bacon, cooked to your liking
2 pieces butter lettuce
1 thick slice of tomato
1 Tbsp homemade basil mayo (recipe to follow)
build & eat!
homemade basil mayo:
2 large egg yolks
2 Tbsp lemon juice
1/4 tsp sea salt
pinch of black pepper
1 cup olive oil
1 tsp fresh basil leaves, mashed into a paste with mortar & pestle
place yolks, lemon juice, salt, pepper, & mashed basil into a bowl & gently whisk until light & smooth - DO NOT WHIP THE EGGS.
whisk the oil, a few drops at a time, into the mixture.
make sure the mixture is smooth & well integrated before adding more oil.
whisking will suspend the oil in the yolk mixture & adding the oil a little at a time will keep the mixture in a state of emulsion - which is what you want.
after about 1/3 of the oil has been whisked in, you can speed up the pouring a bit.
make sure the mixture is back in emulsion before pouring any more oil.
once all the oil has been whisked in, you have mayonnaise.
if it looks a little thin, place in fridge, covered, for about 10-15 minutes before using.
whatever you don't use immediately, put it in a jar & refrigerate. it should last up to a week.
